Questions & Replies

Sweetie Pie's Mac and Cheese Recipe - Food.com (13)

  1. I followed the direction for the ingredients and mixed everything up, cooked a 16oz box of elbow macaroni, but it’s too much to fit in a 9x13 and also there seems to be too much mix in the bowl for the macaroni. Do I not use all the mixture?

  2. Your ingredients call for 3 eggs but if you watch the Guy Fieri vidéo of the lady making her recipe she uses 5 eggs. Which is correct?

    Larry S.

  3. The cheese turned out grainy

  4. Can I put this all together and bake the next day?

  5. Can this be made and heated in a crockpot in lieu of baking it in the oven?

Reviews

  1. FYI This is not a review, as I will be trying this recipe for a tailgate party next Saturday, but a heads up. In the video from DDD Sweetie Pie used 2 tbsp. of SOUR CREAM as well in the recipe & that ingredient has been omitted from some of the websites that posted her recipe. Sour cream definitely adds that certain something to a lot of things so its a step I wouldn't leave out, especially if you want to make her signature dish.

  2. made the mistake of following another review where they suggested no evap milk and cut back on the cheese .......let me tell you ....Follow the recipe as written ....its a 5 star as written or a 2 star with the modifications

  3. A really terrific pot luck dish, although I recommend a 15 x 10 pan, rather than the 13 x 9 stated in the recipe.

    Laura C.

  4. I made this for our community pot luck and everyone raved about it. Last week an elderly lady from the complex came up to my apartment and told me she was having a pot luck tomorrow and would I bring that "wonderful" Macaroni & Cheese. I've never been asked to a pot luck solely so I could bring a dish, but I suppose there is a first time for everything. <br/>Sweetie Pie's version of Macaroni and Cheese is a lot like what my Mother used to make. My Grandmother and my Mother are from the South and she's the only one that I know of, that made it this way.

  5. Thanks Chef #1800118644 - I added the sour cream like Sweetie Pie did and it was wonderful!

Tweaks

  1. This is excellent. I have been searching for a mac and cheese recipe and this one is it. It is fantastic. Here are my suggestions: Substitute evaporated milk for a total of three cups of milk. Put this in a dutch oven with the eggs and cheeses (except for the mild cheddar). Cook on med/low until melted and well blended. Add the sour cream (2T) and sugar. Taste the SO DELICIOUS! I always get asked to bring this to a gathering.

  2. This was gross and greasy. One stick of butter would have been sufficient. The velveeta taste overpowered the other cheeses. I suggest doubleing the colby and sharp cheeses and adding a block of cream cheese instead of sour cream.

Why add sour cream to mac and cheese? ›

Whether making it from scratch or the box, sour cream is the secret ingredient to rich and creamy macaroni and cheese. This tart and tangy additive goes a long way regarding recipes, and just a dollop can transform any dish into a thick and creamy masterpiece.

What spices are good for mac and cheese? ›

Cayenne, Nutmeg, Black Pepper, and Dry Mustard

These spices will cut through the hearty flavor of the cheese and butter. Simply add ½ teaspoons of cayenne, black pepper, and dry mustard with a dash of nutmeg to a mixture of 1 egg and 1 cup (0.24 l) of heavy cream.

Add more milk if you haven't already. More milk leads to less dry mac and cheese. If that doesn't work and you've already tried, use a different type of cheese. Velveeta works well.

What does adding more milk to mac and cheese do? ›

The sauce was thicker, creamier, and shinier. It behaved like actual cheese, with tiny little cheese pulls between the elbow noodles. I may never add milk—or any other liquid dairy for that matter—ever again.

Why does my homemade mac and cheese taste bland? ›

Try adding a little more salt first, because that might fix it. If the problem was the cheese you use doesn't have much flavor, then try adding some other flavors, such has mustard or hot sauce.

Why is my mac and cheese never creamy? ›

Pro Tip: Don't use pre-shredded cheese. Many store-bought shredded cheese brands coat their cheese with an anti-caking agent than can make sauces grainy and less creamy. While it requires a bit of an arm workout, grating your own yields the best texture.

What keeps mac and cheese moist? ›

It's all about the sauce. Put plenty of milk in that sauce and even add a little sour cream. The pasta will absorb some of the liquid, but not all of it and your sauce will be moist and cheesy.

Why use evaporated milk in mac and cheese? ›

Evaporated milk is a highly concentrated source of milk protein micelles—bundles of proteins that can act as powerful emulsifying agents—which help to keep the sauce creamy and smooth.

What kind of milk is best for mac and cheese? ›

Any milk is fine. I usually use whole milk, then add some cream, sometimes, just to make it richer. Then you add the cheese of your choice, and melt that, then put the cooked macaroni in. If you are used to using evaporated milk, it's because it makes the sauce a little creamier/richer.

What can you add to box mac and cheese to enhance the flavor? ›

Here are a few of my favorite ways to upgrade boxed mac and cheese in three ingredients or fewer:
  1. Broccoli + Shredded Chicken. ...
  2. Bacon + Peas + Egg. ...
  3. Garlic + Pickled Jalapeños. ...
  4. Mushrooms + Thyme + Grated Gruyère. ...
  5. Pesto + Sun-Dried Tomatoes. ...
  6. Kimchi + Bacon + Chopped Scallions. ...
  7. Cherry Tomatoes + Basil + Mozzarella.
