Ingredients
- Chicken: You can use ground or shredded chicken, both work well.
- Olive Oil: You can use avocado oil instead if you’d like.
- Beans: I like to use black, pinto, and white beans. You can use all three, just two, or only one type of bean.
- Tortilla Chips: Any brand will work!
- Mexican Style Cheese: Add a little extra if you want some super cheesy nachos!
- Jalapeños: I like to toss on some pickled jalapeños for a little spice! You can use fresh peppers instead or omit this ingredient entirely to avoid added heat.
- Toppings: This is where you can get creative! I find that the best chicken nachos feature toppings like shredded lettuce, black olives, cherry tomatoes, avocados, red onions, sour cream and lots of fresh cilantro. And of course the jalapeños previously mentioned!

How to Store and Reheat
Chicken nachos are best served fresh! But you can store the chicken in an airtight container in the fridge for 3 days. Assemble leftovers and bake to serve fresh nachos.
What kind of chicken works best for nachos?
When it comes to nachos, ground or shredded chicken work best. You want something that fits easily on top of the chips as well as something that can soak up flavors. If you’re shredding the chicken, use the Crockpot or Instant Pot for the best results!
Why do I need to line the pan with foil?
This will make sure that the nachos don’t stick to the baking sheet and also makes for easy clean up! I recommend covering the bottom as well as the sides.

Mexican Chicken Nachos Recipe
Easy Sheet Pan Chicken Nachos made with crispy tortilla chips topped with seasoned ground chicken, beans, shredded Mexican style cheese and loaded with your favorite nacho toppings.

Ingredients
- 1 pound ground chicken or cooked rotisseri chicken, shredded (see note)
- 1 teaspoon salt
- 2 teaspoons chili powder
- 1 teaspoon paprika
- ¼ teaspoon black pepper
- ½ teaspoon cumin
- ½ teaspoon coriander
- 1 tablespoon olive oil
- ⅓ cup black beans
- ⅓ cup pinto beans
- ⅓ cup white beans
- 6 cups tortilla chips
- 1 cup shredded mexican style cheese
- 2 tablespoons pickled jalapeños sliced
- 1 cup shredded lettuce
- ½ cup black olives
- ½ cup cherry tomatoes sliced
- 1 avocado sliced
- 2 tablespoons red onion sliced
- ½ cup sour cream
- fresh cilantro chopped
- lime slices
Instructions
Place the ground chicken in a large bowl.

Add the salt, chili powder, paprika, black pepper, cumin, and coriander, mix.

Heat olive oil in a medium sized skillet.

Add the chicken, sauté.
While the chicken is cooking, use a wooden spatula to break up the meat. Continue to sauté until it is cooked through completely.
Add the black beans, pinto beans, and white beans, mix to combine.
⅓ cup black beans, ⅓ cup pinto beans, ⅓ cup white beans
Preheat oven to 400°F.
Line a large baking sheet with aluminum foil.
Spread the tortilla chips in an even layer on the baking sheet.
6 cups tortilla chips
Spoon the ground chicken mixture over the chips.
Sprinkle the cheese evenly over the chips and chicken mixture.
1 cup shredded mexican style cheese
Top with the jalapenos.
2 tablespoons pickled jalapeños
Place baking sheet in the oven and bake for 6-8 minutes.
Serve immediately.
Plate the nachos and top with desired toppings – shredded lettuce, black olives, cherry tomatoes, avocado, red onion, sour cream, cilantro and lime juice.

Notes
- If using pre-cooked rotisserie/shredded Chicken, you won’t need to cook it as long on the skillet. Cook it just long enough to warm and toss in the spices. Add 1 tablespoon water if needed.
Storage: Store cooked chicken in an airtight container in the refrigerator for 3 days, or freeze for 3 months. Store nachos toppings separately, and assemble fresh to serve.
